Spicy Spinach Straws

Ingredients
1/2 teaspoon ground Coriander
1/2 teaspoon ground Cumin
175g Frozen chopped Spinach - defrosted & drained
110g Plain flour
45g Butter - cut into small dice
1 Garlic clove
1/4 teaspoon Bicarbonate of Soda
1/4 teaspoon Turmeric
1/4 teaspoon ground Cayenne pepper or Chilli powder
1/2 teaspoon Salt

Method
1. Preheat the oven to 180oC/350oF/Gas 4
2. Sift flour into a large bowl, cut the butter into small cubes, then rub in using fingertips until the mixture resembles breadcrumbs.
3, Carefully add the spices, bicarb of soda & crushed garlic and salt.
4. Squeeze the spinach with your hands to get rid of the excess water, then stir in the spinach into the mixture, mixing well.
5. Bring the dough together with your hands until it forms a ball and the sides of the bowl are clean.
6. Transfer the dough onto a lightly floured surface and roll out into a rectangle shape, to a depth of 6mm thick.
7. Cut into strips 1 cm wide, then twist and place on a baking tray lined with baking paper.
8. Bake for approx 15-20 minutes until browned.
9. Leave to cook on a wire rack. Store in a tin for up to 1 week.
