White Chocolate & Cranberry Cookies
Ingredients
75g soft butter
50g caster sugar
25g soft brown sugar
1 tablespoon Milk
1 teaspoon Vanilla extract
110g Self raising Flour
50g flaked Oats
50g White Chocolate chunks
50g chopped Cranberries
Method
1. Pre heat oven to 180oC 375oF Gas 4
2. Line baking tray with parchment
3. Beat the butter with caster and brown sugar with a wooden spoon until it turns pale & fluffy.
4. Add the milk and vanilla and mix together.
5. Sift the self raising flour and mix well to make a stiff dough.
6. Stir in the oats, white chocolate & chopped cranberries.
7. If the mixture appears too stiff, add alittle more milk. Use your hands to roll the mixture into walnut size balls.
8. Place on a baking tray and flatten with the palm of your hand.
9. Bake for approx 10 minutes or until golden. Leave to cool on a wire rack, then store in an airtight tin.
