Apple Crumble Muffins
Topping
25g Butter
25g Demerara sugar
25g Plain flour
25g ground almonds
Base
140g Plain flour
1 tsp baking powder
90g Caster sugar
1/2 lemon
75g Butter
1 large Egg
50ml Milk
1 Eating Apple washed
Method
1. Pre heat oven to 190oC/375oF/Gas5.
2. Make topping first. Cut the butter into small pieces and put into a mixing bowl. Add the sugar, flour and ground almonds. Rub with your fingertips until they look like small peas!
3. Put a sieve over a large mixing bowl. Tip the flour into the sieve. Add the baking powder. Add the sugar to the bowl and mix together.
4. carefully grate the lemon zest (only grate the yellow of the lemon leaving the white pith on the fruit). Add the zest to the bowl and stir making a well in the centre of the bowl.
5. Melt the butter, pour into the well in the bowl.
6. Break egg and beat with a fork, add to the well in the bowl. Add the milk and mix gently with a spatula till the mixture comes together.
7. Spoon mixture into 6 paper muffin cases.
8. Carefully cut apple into 1/4's remove the core, chop apples and sprinkle over the muffins.
9. Sprinkle the topping over the muffins.
10. Bake in the oven for approx 25 minutes until golden brown.
11. Cool on a wire rack.
