Cheese & Chive Wholewheat Scones


Ingredients serves 6
75g Wholemeal flour
75g Self Raising flour
25g Soft butter
1teaspoon baking powder
2/3 tablespoons milk
75g finely grated strong cheddar cheese
1Egg
1/2 teaspoon mustard powder
2 good pinches of cayenne pepper
pinch of salt & some chopped chives


Method
1. Measure flours carefully and sift into a large bowl. Add any bran to the bowl with mustard powder, salt, baking powder and cayenne pepper.
2. Fold this mixture together with a spoon. Rub in the butter with fingertips until the mixture is crumbly.
3. Mix in most of the cheese, save about 1 tablespoon.
4. Add the chopped chives to the mixture.
5. In a small bowl beat the eggs with 2 teaspoons of milk.
6. Add to the large bowl to make a soft dough - it should leave the bowl clean. If it's too dry add a little more milk.
7. On a floured surface turn out the dough. Either roll out to approx 2cm thick OR use hands to pat into shape.
8. Cut out scones using a 21/2cm cutter, place on a lined baking tray. Brush the tops with milk, sprinkle over remaining grated cheese and a pinch of cayenne pepper.
9. Bake in a pre heated oven 220oC/425oF gas 7 for 15-20 minutes. 10. Cool on a wire tray and serve warm!
