Blueberry & Cinnamon cake
Ingredients
50g soft butter
50g golden caster sugar
50g Self raising flour
1 egg
1/2 tsp vanilla
1tbs milk
55g blueberries
Topping
25g soft butter
45g caster sugar
20g plain flour
1/4tsp cinnamon
Method
1 Pre heat oven 180oC 375oF Gas 5.
2. Line a cake tin with baking paper & crease the paper with butter.
3. Put butter & sugar in a large bowl and beat until creamy & fluffy.
4. Beat Eggs and add to the mixture. Beat with a wooden spoon until well combined.
5. Add vanilla & milk, stir well.
6. Pick over blueberries & toss in 1tbs flour. Add to creamed mixture and fold gently!
7. Spoon into prepared tin.
8. Topping - using a fork mix all ingredietns together & drop on top of cake.
9. Bake for approx 20 minutes until golden & and a cake tester comes out clean.
10. Cool on awire rack. Eat warm or cold!
