Easter Cakes
Ingredients
100g soft Butter
100g Golden Caster Sugar
100g self-raising Flour
2 medium Eggs - beaten
1 teaspoon Vanilla extract
Icing (each pair)
125g soft Butter
250g Icing sugar
1 teaspoon Vanilla extract
1/2 -1 tablespoon Milk
To decorate
Chicks
Chocolate eggs
Daisy flowers
Chocolate/Yellow/Orange stands
Method
1. Pre heat oven 180oC/375oF/Gas 5.
2. Cut the butter into cubes, add sugar and beat well with a wooden spoon until pale and creamy.
3. Beat Eggs and add the Vanilla extract.
4. Gradually beat this liquid mixture into creamed mixture slowly!
5. Sieve flour and fold in gently using a spatula.
6. Carefully spoon into a ring tin that has been well greased or paper cake cases.
7. Bake for approx 15 minutes till golden and the mixture 'springs back' when gently pressed.
8. Remove from the oven, cool on a wire rack
Icing
9. Beat the soft Butter using an electric hand whisk or wooden spoon till pale and creamy.
10. Sieve the icing Sugar on top and beat again until the sugar is mixed in.
11. Add the Vanilla extract and Milk and further beat till smooth.
12. Pipe onto the cooked cakes and decorate for an Easter theme!
