Chocolate Chip Muffins


Ingredients
60g Porridge oats
260ml Milk
225g Plain flour
3 tsp Baking powder
85g Chocolate chips
1 Egg
120g Soft brown sugar
1 tsp Vanilla extract
85g Butter melted

Method
1. Prepare muffin tins. Pre heat oven to 190oC/375oF/Gas 5.
2. In a bowl combine oats & milk. Set aside and soak.
3. In a large bowl, sift together flour, baking powder & stir in chocolate chips.
4. Beat eggs, add to oats & milk mixture. Add sugar & vanilla.
5. Melt butter in a small pan. Add to mixture. Stir well.
6. Pour all wet mixture into dry. Stir until just combined, batter will be lumpy! Do not overstir.
7. Fill muffin cases 3/4 full. Bake for approx 20 minutes until tops are golden brown & firm to the touch.

Double chocolate muffins

Ingredients
225g Plain flour
2tbs Baking powder
1/2 tsp Bicarbonate of soda
150g Caster sugar
4 tbs Cocoa
85g Chocolate chips
1 Egg
250ml milk
1 tsp Vanilla extract
85g Butter - melted

Method
1. Prepare muffin tin. Pre heat oven 190oC/375oF/ Gas5.
2. In a large bowl, sift together flour, baking powder, bicarbonate of soda, sugar & cocoa. Add chocolate chips.
3. In another bowl, beat egg with a whisk. Stir in milk & vanilla.
4. Melt butter in a small pan & add to the bowl.
5. Pour all of the wet mixture into dry. Stir just until combined - the batter will be lumpy!
6. Fill muffin cases 3/4 full. Bake for approx 20 mins.
7. To test if cooked the tops of the muffins should spring back when gently pressed.
