Open fruit Pie
Ingredients
100g Plain flour
65g Butter
2tbs cold water
3 Nectarines
Small handful of raspberries
40g approx sugar
little milk & sugar to glaze
1/2 tsp Cinnamon & squeeze of Lemon juice
Method
1. Put the flour into a large bowl.
2. Cut the butter & rub into the flour using your fingertips - until they resemble breadcrumbs.
3. Stir in 2 tbs cold water using a round bladed knife. Bring the dough together using hands to form a ball.You may nean a little more water.
4. Dough should be firm and not sticky.
5. Chill pastry, wrap in cling film.
6. Cut nectarines in half - remove stone and slice.
7. Pre heat oven 200oC/400oF/Gas 6.
8. Remove pastry from fridge and roll out into a large circle.
9. Lift onto baking tray linned with baking paper.
10. Put the fruit in centre of the pastry, sprinkle with sugar & cinnamon, drizzle over lemon juice.
11. Fold the edges of the pastry over the fruit, leave a hole in the middle.
12. Brush with milk, sprinkle over more sugar.
13. Bake approx 15/20 minutes until golden brown.
