Tomato & Basil Rolls
This recipe makes 5 rolls!
Ingredients
250g Self rasing flour
pinch salt
125g cottage cheese
Few basil leaves
1 medium egg
75ml milk
3 cherry tomatoes
1tbs pesto/olive oil
Method
1. Pre heat oven to 190oC 375oF Gas 5
Line a baking tray with baking paper and dust with flour.
2. Put the flour, salt, chopped basil & cottage cheese in a large bowl. Mix well using a spoon.
3. Rub with fingertips until the mixture looks like crumbs.
4. Beat egg, add milk & stir together.
5. Add egg & milk mixture, mix well with a spoon, Bring together with your hands to make a soft dough ball. If a little sticky add flour.
6. Sprinkle flour over work surface and gently knead dough until it looks smoother.
7. Divide dough into 5 pieces, shape each one into a ball. Arrange on a baking tray. Push with thumb to make a deep hole in the centre.
8. Push a basil leaf into the hole then add a single tomato.
9. Brush olive oil or pesto onto the roll.
10. Bake for approx 20 minutes until golden.
Cool on wire rack - Eat warm!
