Cheese Filo Triangles

 

How to handle filo pastry?
Bring to room temperature,
Unroll and cover with cling film to prevent drying out
Brush with melted butter lightly
Keep shape straight when folding 
Handle lightly - pastry should be light & crisp

Cheese Filo triangles

Ingredients
ricotta cheese
smoked ham
mozzarella cheese
parmesan cheese grated
cheddar cheese grated
pinch of mixed dry herbs
black pepper
cherry tomatoes
chives chopped
melted butter

Method
1. Pre heat oven 180oC/375oF/Gas 5
2. Filling - cut the ham and tomatoes into small pieces, cut tomatoes in half.
3. Mix all filling ingredients together.
4. Take one sheet of pastry - cover remainder.
5. Cut into equal strips & brush lightly with melted butter.
6. Put a teaspoon of the cheese mixture in one corner of the pastry strip.
7. Take a corner and gently fold diagonally across filling. Fold up and then accross again. Repeat until a triangle shape is made, do not press down - keep the folding light against the mixture!
8. Brush the finished triangle lightly with melted butter.
9. Bake on a lined baking tray for approx 15 minutes
