Jammy Cookies (makes 15)
Ingredients
110g soft butter
50g caster sugar
1/2 teaspoon vanilla
135g plain flour
1/4 teaspoon baking powder
jam raspberry, apricot, strawberry jam
Method
1. Pre heat oven 180°C/375°F/ Gas 4
2. line a baking tray with baking paper
3. Put butter and sugar in a large bowl, beat well using a wooden spoon until creamy and fluffy.
4. Add vanilla, sift flour and baking powder and fold in. Mix until a soft dough is formed.
5. Take a small piece of dough and roll into a ball with your hands, then place on a baking tray, keeping each ball well apart.
6. make an imprint into each ball using your finger.
7. Fill each cookie with about 1/2 teaspoon of jam. Dont overfill!
8. Bake in the oven for 15-20 minutes until golden brown, cool on a wire rack - then enjoy!!
