Pumpkin Muffins
Ingredients
125g plain flour
1/2 teaspoon baking powder
1/2 teaspoon bicarbonate of soda
pinch salt
1/2 teaspoon cinnamon
1/4 teaspoon ginger & nutmeg
70g caster sugar
1 small egg
50 ml milk
1 table spoon honey
40g melted butter
100ml pumpkin puree
40g raisins or chopped walnuts
Method
1. Put muffin cases into tins. Pre heat oven 180oC/375oF/gas 5
2. In a large bowl sift together - flour, baking powder, bicarb of soda, salt and spices. Add sugar, stir well.
3. Beat the egg with a fork. Add milk, honey, pumpkin and melted butter, mixing well.
4. Pour all of the liquid mixture into the dry ingredients. Stir with a spatula until just combined and no dry flour can be seen.
5. Add raisins or walnuts - fold in.
6. Spoon batter carefully into cases.
7. Bake for approx 15-20 minutes until golden and tops spring back when presses gently.
8. Cool on a wire rack, eat warm or cold.
