Melting moments
Ingredients
100g soft butter
75g caster sugar
100g self raising flour
25g rolled oats
1/2 egg (approx 25ml)
1/2 teaspoon vanilla
To coat - extra rolled oats, to decorate - glace cherry pieces
Method
1. Preheat oven 180oC/375oF/ Gas 4
2. Line a baking tray with baking paper.
3. In a large bowl cream the butter and sugar until light and fluffy.
4. Beat in the egg and vanilla with a wooden spoon.
5. Sieve the flour and work in with the oats.
6. Form the mixture into approx 15 walnut sized balls. (Dip your hands in cold water and roll the mixture into small balls)
7. Coat the damp balls in rolled oats.
8. Place well apart on the baking trays, then flatten slightly
9. Bake until golden approx 15 minutes.
10. Whilst warm press pieces of cherries into the biscuits.
11. Cool on a wire rack.
