Strawberry & Chocolate Cakes (makes 6)
Ingredients
55g soft butter
55g caster sugar
1 egg
55g self raising flour
2 teaspoons cocoa powder
2 teaspoons milk
3 strawberries
1 tablespoon chocolate spread (nutella)
Mini chocolate sticks
Icing sugar for dusting
Method
1. Preheat oven to 180°C/375°F/Gas 5.
2. Line a muffin tray with paper cases.
3. Beat the butter and sugar together with a wooden spoon until pale and creamy.
4. Beat the egg then add to the creamed mixture.
5. Sift cocoa powder and flour together, then fold in with a spatula.
6. Add milk and beat the mixture until it has the consistency that will drop from a spoon.
7. Fill each paper case 3/4 full, then bake for approx 15 minutes in the oven until risen and spring back to the touch.
8. Cool on a wire rack.
9. Cut the top off each cake to make a small hole. Fill with a little chocolate spread.
10. Cut the strawberries into halves or quarters and place on top.
11. Stick in 2 mini chocolate sticks into each cake.
12. Dust with icing sugar - Eat immediately!
