Crunchy Apple bars
Ingredients
95g soft butter
95g castor sugar
95g light brown self raising flour & white self raising flour
2 small eggs
1 small apple
25g sultanas
1/2 lemon zest and juice
pinch of cinnamon
pinch of mixed spice
25g demerara sugar
25g chopped nuts - pecans, walnuts, hazelnuts
Method
1. Preheat oven 190°C/375°F/ Gas 5
2. Peel and dice apple, place in a bowl with lemon juice, zest and sultanas.
3. In a large bowl beat together the soft butter and castor sugar with a wooden spoon until the mixture is light and creamy.
4. Beat eggs in a seperate bowl, then add gradually to the butter and sugar mixture a little at a time.
5. Beat the mixture well between each egg addition. When all the egg is incorporated, gently fold in both flours and spices.
6. Stir in gently the apple, sultanas and lemon juice and zest.
7. Pour into a pre greased and baking paper base lined tin (20cm square).
8. Sprinkle over demerara sugar and nuts.
9. Bake in a preheated oven for approx 20 minutes until golden and firm to the touch, then cool on a wire rack.
11. When the mixture is cool cut into thin bars.
Eat warm with custard or cold in your lunch box!
