Mini Chocolate muffins with Red Noses


Ingredients for 12 mini muffins
75g plain flour
1 teaspoon cocoa powder
1/2 dessertspoon of baking powder
1 medium egg
20g caster sugar
60ml milk
25g butter melted
25g chocolate drops

Topping
35g milk or plain chocolate
6 Glace cherries (cut in half)

 

Method
1. Line tins with small paper muffin cases. Pre heat oven to 180°C/375°F/Gas 6.
2. In a large bowl sift together the flour, cocoa and baking powder, then place to one side.
3. In a separate bowl beat the egg with a fork, add milk and sugar and stir together.
4. In a small pan melt the butter on a gentle heat, or in the microwave, then add to the sugar, egg and milk and mix well.
5. Add the sifted flour, cocoa & baking powder to the wet ingredients.
6. Fold quickly with a spoon, but do not beat! Fold in the chocolate drops into the mixture.
7. Use a teaspoon to drop the mixture into the muffin cases approx 3/4 fill.
8. Bake for approx 7-10 minutes until well risen (the tops of the muffins should spring back when pressed gently).
9. Cool on a wire rack.
10. Meanwhile, place broken chocolate onto a heat proof bowl. Place onto a pan of simmering water without allowing the bowl to touch the water. Allow the chocolate to melt.
11. When the muffins are cool, spoon a little melted chocolate onto each one. Cut the cherries in half, place a cherry on top.
12. Leave to set before serving!
