Parmesan thins

Ingredients
50g plain flour
40g soft butter
1 egg yolk
40g parmesan cheese
pinch of mustard powder


Method
1. Pre heat the oven to 200°C/400°F/Gas 6
2. Line a baking tray with baking paper
3, Weigh the flour and place into a large bowl. Cut up the butter and add to the bowl. Rub together using fingertips until the mixture resembles breadcrumbs.
4. Separate the egg, add the yolk and stir together using a round bladed knife.
5. Grate the parmesan cheese finely, add this to the mixture with a pinch of mustard powder. Mix together until it forms a dough ball.
6. Lightly flour a work surface and shape into a log approx 30/40mm in diameter. Wrap in cling film and chill for approx 10 minutes.
7. After resting in the fridge, remove the cling film.
8. Cut into thin slices, and arrange on a baking tray.
9. Flatten with a fork to give a rigid pattern.
10. Bake for 10 minutes until golden and crisp, then cool on a wire rack.
Eat warm!
