Apricot & White Chocolate Cookies

Ingredients
50g soft butter
25g caster sugar
75g self raising flour
1 table spoon of milk
35g oatmeal
35g white chocolate - chopped
35g diced soft apricots

Method
1. Preheat oven to 180°C 350°F Gas 4
2. Line baking tray with parchment.
3. Beat the butter and sugar together with a wooden spoon until light and fluffy.
4. Stir in the milk until blended.
5. Sift the flour and fold in to make a stiff dough.
6. Stir in the oatmeal.
7. Chop the chocolate into chunks and cut the apricots into small pieces. Add to the dough and mix well.
8. Flour you hands lightly.
9. Take a walnut size amount of dough, then roll in the palms of your hands to make a ball.
10. Place on the baking tray and flatten slightly.
11. Bake approx 8-10 minutes till a pale golden colour.
12. Cool on a wire rack.
