Bacon & Muffins makes 12 each pair

Ingredients
6 rashers of bacon
125g plain flour
155g coarse cornmeal (yellow)
2 tablespoons golden castor sugar
1 level dessert spoon of baking powder
Pinch of salt
250ml milk
1 small Egg
60 ml vegetable/sunflower oil
60g sweetcorn

 

Method
1. Line a muffin tray with paper muffin cases. Pre heat oven to 200°C/400°F/Gas7.
2. In a frying pan, cook the bacon until golden and crispy. Drain on kitchen paper and cool. Then cut the bacon into small pieces and reserve .
3. In a large bowl mix together; flour, cornmeal, sugar, baking powder and salt.
4. In a small bowl whisk together the egg and milk, then add the corn syrup and oil mixing everything together well.
5. Tip the "wet" ingredients into the dry ingredients, add the bacon and stir until just blended ( no dry flour should be seen!)
6. Spoon the mixture into the cases to about 2/3 full.
7. Bake for approx 15 minutes until a skewer inserted in the centre of the muffin comes clean.
7. Cool on a wire rack, eat warm!.
