Easter Biscuits
Ingredients
100g butter
130g Clear honey
2 tablespoons light brown muscovado sugar
300g oats
2 tablespoons plain flour
1/2 teaspoon baking powder
50g dried soft apricots
2 tablespoons sunflower seeds
2tablespoons sesame seeds
2tablespoons raisins
100g nuts and dried fruit of your choice; dates,cranberries, walnuts, pecans, hazelnuts, pistachio nuts.
Method
1. Preheat oven 160°C/325°F/ Gas 3
2. Line a baking tray with baking paper, (approx 20x28cm tray bake tin including the sides)
3. Place the butter in a pan, add the honey and sugar.
4. Heat this mixture gently until the butter melts.
5. Carefully remove the pan from the heat.
6. Measure out the oats, plain flour and baking powder in a large bowl and mix well.
7. Chop the apricots into pieces and add to the bowl with seeds and raisins.
8. Choose a selection of nuts & dried fruit to 100g and add to the bowl, stir well.
9. Stir the butter mixture then pour this into the dried ingredients, then mix thoroughly.
10. Transfer the mixture into a prepared tin and spread evenly. Press down gently with a spoon.
11. Bake in a pre heated oven for approx 25 minutes then cool on a wire rack.
12. Lift the cooled mixture from a tin using the paper lining, then to cut into 16 bars.
