Oatmeal Biscuits makes 10-12
Ingredients
90g Wholewheat Flour
25g Medium Oatmeal
55g Soft Butter
2 teaspoons Soft Brown Sugar
1/2 teaspoon baking powder
Small pinch of salt
2 pinches of curry powder/paprika
Approx 1/2 tablespoon of milk (to bind)
Method
1. Preheat oven 160oC Fan/180oC/350oF/ Gas 4
2. Line a baking tray with baking paper.
3. Carefully measure the flour and oatmeal into a large bowl.
4. Add soft butter, cut into pieces, sugar, baking powder, salt & curry powder/paprika mix.
5. Using your fingertips, rub the butter until it resembles breadcrumbs.
6. Add the milk and work with one hand until it forms a ball. The dough should not be dry, it should feel slightly wet.
7. Lightly flour your work surface and roll out evenly to 3mm thick.
8. Using a 7cm cutter to cut out biscuit rounds, Re roll any trimmings, and add a drop of milk if dry.
10. Place biscuits on a lined baking tray evenly spread out.
9. Bake for approx 15-20 minutes until firm and lightly browned.
10. Leave to cool on a wire rack before eating - served best with cream cheese or cheddar!
