Ingredients
300g Golden caster sugar
6 tablespoons Golden syrup
50g Butter
3 teaspoons Bicarbonate of Soda
Extra Butter for greasing

Method
1 Line the tin with baking paper and grease the sides with a little butter.
2. Put the bicarbonate of soda into a small bowl and place a folded tea-towel onto the work surface.
3. Put the sugar and golden syrup into a large pan with the butter, stir gently .
4. Put onto the heat carefully. Stir the mixture until melted, then turn up the heat a little until the mixture is golden and bubbling, approx 5 minutes but do not stir. BEWARE THIS IS VERY HOT!
5. Using oven gloves, remove the pan onto the tea-towel.
6. Sprinkle the bicarbonate of soda over the mixture.
7. Immediately the mixture will froth up - quickly stir in.
8. Carefully pour the hot mixture into the prepared tin.
9. Leave until completely cold.
10. Crack into small pieces using a rolling pin or wooden spoon.
11. Large chunks can be half dipped into melted chocolate or cracked into pieces and sprinkle over ice-cream.
