Baci di Dama (Ladies Kisses)

Ingredients
75g Plain flour
75g Ground almonds
75g Caster sugar
65g Butter
1 teaspoon Vanilla extract
1/2 teaspoons of Water
For the filling - 50g Plain/Milk Chocolate

Method
1. Preheat oven 150oC/300oF/ Gas 2
2. Line a baking tray with baking paper.
3. In a large bowl, mix together flour, ground almonds and sugar, then rub in the butter.
4. Rub the mixture well with your fingertips until it looks crumbly.
5. Add vanilla and 1 to 2 teaspoons of water to just bind the ingredients to form a stiff dough.
6. Work the dough lightly for 2 to 3 minutes.
7. Using the palms of your hands, form small amounts of dough into balls the size of cherries. (This mixture should make approx 24)
8. Place these balls on a baking tray, then flatten each one slightly.
9. Cook in the oven for 15-20 minutes until just golden brown, then cool on a wire rack.
10. Meanwhile break up the chocolate and place into a heat proof bowl. Gently melt over a pan of lightly simmering water until just melted, stirring gently. Do not overheat!
11. Allow chocolate to cool a little, using a teaspoon, place a little chocolate onto one underside of the biscuit. Then taking another, using the undrside,press together.
12. Leave until set, then dust lightly with icing sugar and serve.
