Spanish Chick pea & Chorizo stew ( Garbanzos y Chorizos)
Ingredients
1 tablespoon Olive Oil
1 Onion
1 Garlic Clove
200g Chorizo - cut into chunks
1 can chopped Tomatoes
1 can drained chick peas
1/2 teaspoon smoked Paprika 1 can chick peas - drained
2 Tomatoes
Flat leaf Parsley
Salt & Pepper
Method
1. Chop onion finely, heat oil in large pan.
2. Add the onions and cook till golden.
3. Add crushed garlic and chorizo chunks and smoked paprika.
4. Over a low heat cook for about 5 minutes.
5. Add the canned tomatoes and simmer on a low heat for 10 minutes.
6. Remove the core from the fresh tomato, chop roughly then add to the pan with the drained chick peas.
7. Simmer for a further 5 minutes.
8. Finish with chopped parsley and season to taste.
9. Serve warm or at room temperature with crusty bread or garlic dough balls.
