Jammy dodgers


Ingredients
75g Self raising Flour
50g Butter
50g caster Sugar
25g Custard powder
1 small Egg (or 1/2 a large Egg)
1 Tablespoon of seedless Raspberry Jam
A little Milk

Method
1. Preheat oven 180oC 350oF gas4
2. Weigh out the flour, sift into a large bowl. Cut the butter into small pieces and rub in using fingertips until it resembles breadcrumbs.
3. Add the sugar and custard powder and stir into the flour & butter mixture.
4. Beat the egg and add to the mixture stirring in, then bring together with your hands to form a soft dough ball.
5. Put a little flour on the worksurface, rolling pin and your hands.
6. Roll the dough gently to approx 1cm thick. Using a round cutter, cut into small circles. Place half of these on a lined baking tray. Brush these gently with a little warm milk.
7. Take the remainder of the circles and cut a smaller circle from the centre. Place on top of the circles on the tray, and press gently together.
8. Put a small amount of jam in the centre of the biscuit.
9. Place in the oven for approx 15 minutes until light golden in colour.
10. Cool on a wire rack.
