Cheese & Chorizo/Ham Muffins
Ingredients
250g plain flour
1 teaspoon baking powder
110g Emmental or Gruyere cheese
pinch salt and grind of black Pepper
50g thickly sliced Chorizo/Ham
1 large Egg
50g Butter
175ml whole Milk
Method
1. Preheat oven 200oC/400oF/gas 6 Line a muffin tray with paper cases.
2. Set a large sieve over a mixing bowl. Sift flour, baking powder, add salt and a few grinds of pepper.
3. Carefully cut the cheese into small cubes, also cut up the chorizo/ham then add these to the bowl.
4. In a separate small bowl beat the egg, add the milk, melt the butter and add this to the egg & milk.
5. Mix the wet ingredients into the dry ingredients and using a spatula mix well to make a rough looking mixture ensuring the mixture has been blended. Spoon into prepared cases.
6. Bake in a pre-heated oven for approx 20 minutes or until golden brown.
7. Cool on a wire rack, Eat warm or at room temperature.
