Easter Biscuits

Ingredients
50g soft Butter
40g caster Sugar
40g Currants
85g plain Flour
1/2 teaspoon mixed Spice
1/2 tablespoon Milk (8ml)
extra caster sugar for dusting

Method
1. Preheat oven 180°C/350°F/ Gas 4
2. Line a baking tray with baking paper.
3. Sieve the Flour, cut the Butter into small pieces and add to the flour.
4. Rub the mixture well with your fingertips until it resembles fine crumbs.
5. Add the ground mixed Spice, Currants and Sugar and mix well.
6. Add the Milk and stir into the mixture, bring together to form a firm dough using your hands.
7. Knead the mixture well in the bowl, then lightly flour your work surface and roll out the dough thinly to approx 6mm in depth.
8. Cut into rounds using a fluted cutter 6cm, then place on a baking tray.
9. Bake for approx 15-20 minutes.
10. Remove from the oven once cooked, sprinkle the biscuits with extra caster sugar, then leave to cool on a wire rack before eating - ENJOY!
