Plum Tart
Ingredients for the base
75g Plain flour
1/2 tsp Baking powder
1/4 tsp Ground cinnamon
25g Caster sugar
1 Egg yolk
25g Butter chilled & diced
150g Plums cut into slices
1 tbs Plum jam
Ingredients for the topping
15g Plain flour
1/4 tsp Ground cinnamon
15g Caster sugar
15g Almonds
15g Butter chilled & diced
A 13cm Flan ring
Method
1. Pre heat oven to 180oC/375oF/Gas5.
2. Grease the inside of the flan ring with soft butter.
3. Put the flour, baking powder, cinnamon & sugar into a bowl.
4. Add the egg yolk & butter & bring the mixture till it looks like large breadcrumbs.
5. Tip the pastry crumb mixture into the greased flan ring and spread evenly.
6. Press the fixture evenly & firmly with the back of a large spoon.
7.Cut the plums in half, remove the stone by twisting it in the fruit, then cut each half into 4 slices.
8. Scatter the plum slices evenly over the pastry base.
9. Dot Plum jam over the fruit.
10. Place all the ingredients for the topping into a bowl and squeeze them with your fingers until they come together in fine breadcrumbs.
11. Scatter the topping evenly over the fruit. Place the flan on a baking tray into a preheated oven for 30/35 minutes.
