Chocolate & Pear cake


Ingredients
90g Soft butter
75g Light soft brown sugar
2 small eggs or 1 large egg
1 tablespoon of milk
90g self raising flour
25g Cocoa powder
2 small ripe pears
25g light muscovado sugar
1/2 teaspoon ground cinnamon
1tablespoon pine nuts



Method
1. Pre heat oven 180°C 350°F gas 4.
2. Butter and line a 7inch - 171/2 cm tin.
3. Carefully weigh out the butter & sugar place in a large bowl. Cream together with a wooden spoon until light & fluffy.
4. Beat the egg(s) with the milk and add gradually, mixing well after each addition.
5. Sieve the flour & cocoa and fold into the mixture.
6. In a small bowl mix the muscovado sugar with cinnamon, break up any lumps.
7. Take the pears, peel, quarter and thinly slice.
8. Put half of the cake mixture into the tin, spread the mixture evenly; arrange half of the pears on tip. Sprinkle over half sugar & cinnamon. Then spoon over the remaining cake mixture, arrange pear slices on top, sprinkle with sugar and pine nuts.
9. Bake in a pre heated oven for approx 30 minutes. Cool on a wire rack.
