Chocolate Puddings serves 4
Ingredients
Little melted butter
25g cocoa powder
45ml boiling water
50ml milk
2 small eggs
85g self raising flour
3/4 tsp baking powder
50g soft butter
185g caster sugar
approx 100g plain chocolate
icing sugar for dusting!
Method
1. Pre heat oven 200°C 400°F Gas 6. Brush melted butter inside ramekins.
2. In a small bowl put cocoa, carefully blend in boiling water. Add milk & stir til smooth.
3. Beat eggs, add sugar, butter, flour & baking powder. Add cocoa mixture.
4. Use whisk & beat well into a thick smooth batter.
5. Pour into ramekin dishes. Break up chocolate into individual squares & put 3to4 pieces stacked onto of each other in the centre of the mixture.

Bake for 15-20 minutes until firm & coming away from the sides of the ramekin.
7. Leave to restfor 5 minutes, dust with a little icing sugar & enjoy!
Can be served with cream.
