Almond Cookies

Ingredients
50g soft butter
25g caster sugar
few drops of almond extract
50g self raising flour
25g ground almonds
flaked almonds - to decorate

Method
1. Pre heat oven to 180°C 350°F Gas 4
2. Line baking tray with parchment
3. Beat butter with a wooden spoon till soft. Gradually add sugar & extract beat well.
4. Mix in flour & ground almonds
5. Bring mixture together with hands forming a dough ball. Add 1 tbs water if needed.
6. Make a ball using hands (the size of a walnut) Place on the baking tray.
7. Dip a fork into water & flattern biscuits. Sprinkle over almonds.
8. Bake approx 15 minutes till very pale golden
9. Cool on a wire rack.
