Cottage Pie
Ingredients
250g minced beef
1 onion - 1 carrot - 1/2 leek - 1 stick of celery
1 tbs Olive oil
parsley chopped
1/2 tsp mixed herbs
2 tbs tomato puree
salt & pepper
50g frozen peas
4 medium potatoes
4 tbs milk
25g butter
Method
1 Peel and chop all vegetables.
2. Put a little oil in the pan & when hot add the onions & saute until golden. Add leeks, carrots & celery, cook until all vegetables are soft.
3 Add meat, mix well, dry herbs, seasoning & beef stock, stir well.
4. Adjust heat to a gentle simmer and leave to cook for approx 15 minutes.
5. Meanwhile, peel and chop potoatoes into even sized pieces. Put in a pan of cold water & bring to the boil. Simmer until the potatoes are soft but not broken.
6. Drain & mash well, add milk & butter & seasoning, mix well.
7. Put beef mixture into an ovenproof dish, stir in peas and chopped parsley.
8. Spoon or pipe mashed potato over the meat. You can make a pattern using a fork, palate knife or smooth using the back of a spoon.
9. Place into a pre heated oven 180°C/375°F/Gas 5 for approx 20 minutes until golden and heated through.
