Easter nests


Ingredients - cake
100g butter
100g sugar
200g self-raising flour
2 Eggs
1 Tsp Vanilla

Icing
50g Soft butter
100g Icing sugar
25g Plain chocolate - melted
1 Tbs Milk
1 Tsp Vanilla
Decorate with chocolate eggs, chicks, strands.

Method
1 Pre heat oven 180oC/375oF/Gas 5.
2. Put soft butter & sugar in large bowl. Beat well with wooden spoon til soft & creamy.
3. Beat eggs, add vanilla and mix together.
4. Gradually add beaten egg mixture into creamed mixture. Beat well till smooth.
5. Fold in sieved flour-fold in gently with spatula.
6. Wipe inside of mould with butter on kitchen paper.
7. Spoon cake mixture - 1/2 fill the cake mould.
8. Bake 15-20 minutes till golden.

Icing
9. Beat butter with icing sugar till smooth, add milk, vanilla & melted chocolate. Beat well until smooth and blended.
10. Put icing in a clean plastic bag, push to the corner, carefully cut out a small piece from bag - use as piping bag.
11. When "nests" are cool decorate with chocolate icing, chicks, eggs, choc bunnies & choc sprinkles.
