Eggs 'En Coccote' with Irish Soda bread
Ingredients - Eggs en Cocotte
Soft butter - kitchen paper
1 Egg
Salt & Pepper
25g Cheddar cheese - grated
Chives - sprinkle over before serving
Method
1. butter the ramekin dish well using the soft kitchen paper.
2. Sprinkle in half the cheese.
3. Break an egg carefully into the ramekin. Add a little salt & pepper.
4. Sprinkle over the egg the remaining cheese.
5. Add a tbs of milk & dot the egg with small pieces of butter.
6. Bake ina pre heated oven 180°C375°F/Gas 5 for 15 minutes in a "bain marie. "
Ingredients - Soda bread
450g Plain white flour
or 200g Plain flour/ 200g Plain wholemeal flour
50g Wheatbran & Wheatgerm.
1 tsp Salt
11/4 tsp Bicarbonate of Soda
350ml Buttermilk approx
Method
1. Pre heat oven to 220°C/425°F/Gas7.
2. line a baking tray with baking parchment, scatter with a little flour.
3. Set a sieve over a large bowl & sieve flour, salt & bicarbonate of soda. Make a well in the centre.
4. If using wholemeal flour do not sieve.
5. Pour butter milk into the well.
6. Mix together using a round bladed knife & your hands. Dont worry if it looks a bit rough!
7. Scatter a little flour onto a work surface & your hands. Gently shape the dough into a ball.
8. Put the dough onto a baking tray & flatten it slightly (3-4cm high)
using a table knife score the dough into quarters (4's!).
9. Place into a pre heated oven for about 35 minutes until golden brown.
10. Remove from the oven, turn upside down onto a wire rack and tap with your knuckles. The loaf is cooked when it sounds hollow. Leve to cool.
