Sweet & Savoury Crepes


Ingredients
110g Plain Flour
2 Eggs
200ml milk
75ml Water
Little butter & oil for the pan

Filling - Sweet
Lemon & Sugar
Golden syrup or Honey
Jam

Fillings - Savoury
Cheese & Ham, Prawn, Ricotta Cheese & herbs

Method

1. Sieve the flour into a large bowl. make a well in the centre and break the eggs into it.
2. Begin to whisk the eggs to incorporate flour from the edges of the bowl as you go.
3 Start to add milk and water gradually.
4. When all the liquids are added, scrape round the bowl with a spatula and make sure the batter is free from lumps.

Cooking the pancakes

5. Heat a non stick frying pan add a little oil or butter and swirl it around to get the pan coated; tip off any excess into a small bowl.
6. Get the pan very hot, then turn the heat down to medium.
7 Pour batter into the pan, as soon as it hits the pan, tip it and turn the from side to side to coat the base of the pan evely with pancake batter.
8. It should only take a minute to cook.
9. Lift the edge, it should be tinged with golden brown.
10. Turn the pancake over and cook until golden and bubbles appear.
11. Stack on a plate and cover with foil or keep warm. Or if stuffing place the filling on half of the pancake and fold the other half over.
12. Bake in a pre heated oven 190°C/375°F/gas 5 for 15 minutes or until heated through.
13. Eat immedietly!
