Apple cake
Ingredients
1 Bramley apple
225g Self raising flour
1tsp Baking powder
1/2 tsp mixed spice
125g Butter
125g Caster sugar & 1tbs for sprinkling over
2 Eggs
Zest of lemon
Method
1. Pre heat oven 190°C/375°F/Gas 5 Lightly butter a spring form cake tin.
2. Peel apple. Cut into 1/4's, remove core, reserve one quarter & dice the rest.
3. Sift the flour, baking powder & spice into a large bowl. Rub in diced butter to form fine "breadcrumb" texture.
4. Stir in sugar, diced apple & lemon zest. Gradually stir in beaten eggs to form a stiff mixture.
5. Spoon into tin & level surface with back of a spoon.
6. Thinly slice reserved apple & arrange on top of the cake.
7. Bake for approx 20 minutes. Once cooked sprinkle over remaining sugar, cool & turn out onto a wire rack.
