Apricot Cake

Ingredients
50g soft butter
50g caster sugar
50g self raising flour
1egg
1/2 tsp vanilla
1 tbs milk
2/3 apricots

Topping
25g soft butter

45g castor sugar
20g plain flour
1/4 tsp cinnamon

Method
1. Pre heat oven to 200°C Fan180°C 375°F
.
2. Line cake tin with baking paper & grease with butter.
3. Put butter & sugar in a large bowl. Beat well until creamy & fluffy.
4. Beat egg & add to the mixture. Beat well with a wooden spoon until combined.
5. Add milk & vanilla
6. Carefully fold in flour. Spoon into prepared tin.
7. Cut apricots in 1/2 - remove stone. Slice into 4 or 6. Arrange on top of cake mixture.
8. Topping - using a fork mix all ingredients together and drop onto apricots.
9. Bake approx 20-25 minutes until golden & a cake tester comes out clean.
10. Cool on a wire rack. Eat warm or cold!
