Mango chutney

Ingredients
500g diced mango - cut the mango into 15mm roughly pieces
100g sugar
1 teaspoon salt
1/2 teaspoon cumin seeds - roasted in a dry frying pan & then ground
2 teaspoons lemon juice
1/2 teaspoon fresh ginger - chopped into small dice
1/2 teaspoon dried red chilli flakes
pinch of onion seeds - often called Nigella seeds!
2 green cardamon pods -split to allow the seeds to be removed
2 cloves


Method
1. Place all the ingredients into a pan.
2. Add 200ml of water and bring to a simmer.
3. Simmer the mixture for 5 minutes on a very low heat
4. Remove from the heat and allow to cool.
5. Store in an air tight container once cook in the fridge or use as required.
