Lemon Tart

Ingredients for the Pastry
200g Plain flour
100g butter
1 large egg
1 tablespoons icing sugar
pinch of grated nutmeg

Ingredients for the filling
4 tablespoons golden syrup
1 lemon
2 eggs
4 tablespoons soured cream
25g ground almonds

Method
1. Pre heat oven to 180°C place a baking tray in the oven.
2. Put flour & butter in a large bowl.
3. Rub in using fingertips. Add icing sugar and nutmeg.
4. Add lightly beaten egg, stir with a knife until it forms a ball.
5. Nead lightly - Roll out and line a tin, then rest in the fridge.
6. Measure the syrup carefully, add grated rind of lemon & juice.
7. Lightly beat the eggs and cream together. Add to the syrup mixture and blend together.
8. Scatter ground almonds over the pastry base, pour the filling over the almonds.
9. Bake on top of the pre heated sheet in the oven for 20 minutes or until the mixture is set and risen.
Eat warm with cream or cold - Enjoy!
