Pudsey Bear Cupcakes Makes 12


Ingredients
110g soft butter
110g caster sugar
110g self-raising flour
2 medium eggs
1 tea spoon vanilla
1 table spoon cocoa

Icing
80g soft butter
250g icing sugar
1 table spoon milk
1 tea spoon vanilla
pudsey bear decorations, sprinkles etc
Pudsey paper cases

Method

1. Preheat oven 180°C/375°F/Gas 5.
2. Line a muffin tray with paper Pudsey cake cases.
3. In a large bowl beat together butter and sugar in bowl with a wooden spoon until light and fluffy.
4. Beat eggs separately and add vanilla.
5. Add egg and vanilla mixture slowly to butter and sugar mixture.
6. Beat mixture well between each addition .
7. Sieve self raising flour and fold into the mixture & fold in carefully.
8. Put 1/2 of this mixture into a separate bowl, add the sieved cocoa and fold gently in until completely mixed.
9. Put 1 teaspoon of vanilla mixture and 1 teaspoon of chocolate mixture into each case, swirl together using a cocktail stick (or the end of a teaspoon) to give a marble effect.
10. Bake in a preheated oven for approx 15 minutes until risen, cool on a wire rack.

Decorate
11. Beat the butter until soft.
12. Add milk, vanilla and sieved icing sugar, then beat well until smooth and creamy.
13. Fill a piping bag with icing (fitted with a star nozzle) and use to decorate cakes.
14. Sprinkle over 100's & 1000's and decorate with Pudsey bear sweets.
