Mini Apple spiced loaves
Ingredients
55g soft butter
150g sugar - 75g caster sugar & 75g soft brown sugar
135g apple sauce - 1 small bramley apple, 1-2 tablespoons water, 1 tablespoon sugar (to taste)
1 egg
140g plain flour
3/4 teaspoon bicarbonate of soda
pinch of salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
40g raisins
1/2 teaspoon ground ginger
Method
1. Pre heat oven 180°C/350°F/Gas 4.
2. Peel core and quarter apple. Cut into slices.
3. Place in a pan with water and sugar.
4. Cook over a gentle heat until it becomes a pulp. Remove from the heat, stir well and cool. Taste for sweetness.
5. Prepare mini loaf tins. Brush with melted butter, place a strip of baking paper to line and overhang the edges of each tin.
6. Cream the butter using a wooden spoon, gradually add the sugars and beat after each addition until creamy and fluffy.
7. Add the cooled apple sauce and blend.
8. Beat the egg together and mix well.
9. Sift the flour, bicarbonate of soda, salt and spices and gently fold in using a spatula.
10. Stir in the raisins.
11. Spoon carefully into lined tins fill 2/3 full.
12. Bake for approx 20-25 minutes until risen and golden in colour.
13. Cool on a wire rack.
(can be eaten warm with extra apple sauce on the side)
