Simnel Cupcakes
Ingredients
85g mixed dried fruit
finely grated zest & juice of 1/2 orange
85g self-raising Flour
1/3 teaspoon mixed spice
pinch of nutmeg
60g caster sugar
60g soft butter
1 egg
25ml milk
To fill and decorate
25g marzipan
85g Icing sugar
1/2 tablespoon hot water
chocolate eggs/marzipan flowers
Method
1. Pre heat oven 180°C/375°F/Gas 5.
2. Line a muffin tray with paper cases.
3. Place the dried fruit in a bowl with the orange juice and zest. Leave to allow the dried fruit to plump up.
4. Beat the butter and sugar with a wooden spoon until creamy and pale.
5. Beat egg and milk, add to the butter mixture gradually, beat well between each addition.
6. Sift the flour, spices and nutmeg and fold in.
7. Add the fruit and any residual orange juice, then fold in gently.
8. Half fill the cases with the mixture.
9.Take the marzipan and divide into small balls and flatten, place on top of the mixture in the muffin cases.
10. Then spoon the remaining mixture over the top of the marzipan.
11. Bake in the preheated oven for approx 20 minutes until golden, then leave on a baking rack to cool.
12. Glace Icing. Sift the icing sugar stir in the warm water and mix well to remove any lumps.
13. Decorate when the cakes are cold, spreading a little icing over the cakes then add some chocolate eggs and marzipan flowers.
