Red nose day Gingerbread Monsters
Ingredients
175g plain flour
1/2 teaspoon bicarbonate of soda
1/2 teaspoon ground ginger
50g soft butter
85g soft brown sugar
50g golden syrup
1 small egg (or 1/2 large egg beaten)
Method
1. Pre heat oven to 170°C/350°F/Gas 5 Line a baking tray with baking paper.
2. Sift together flour, bicarbonate of soda and ginger in a large bowl.
3. Cut the butter into small pieces and rub into the flour until it resembles fine breadcrumbs.
4. Stir in brown sugar.
5. In a small bowl carefully measure golden syrup, and mix well with beaten egg.
6. Add to dry ingredients.
7. Mix with a spoon, then use hands to form a stiff dough.
8. Dust work surface with flour & roll out dough and evenly shape to the thickness of a pound coin.
10. Using a cookie cutter to make rounds approx 8cm.
11. Place on a lined baking tray in a preheated oven for approx 10 minutes until golden.
12. Cool on a wire rack & decorate when cold.
13. Use white, red and black icing to pipe monster faces on the cooled gingerbread, use brown and red smarties to decorate.
14. A skewer can be pushed through the cookie to make a hole and ribbon threaded through to wear around your neck. Happy red nose day!
