Passion cake


Ingredients
85ml vegetable oil
75g soft brown sugar
2 small eggs
1/2 teaspoon vanilla extract
100g carrots
50g sultanas
25g dessicated coconut
25g dates chopped
75g plain flour
1/2 teaspoon bicarbonate of soda
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
pinch of salt
1/2 orange zest

Frosting
75g full fat cream cheese
50g soft butter
100g icing sugar
orange zest

Method
1. Pre heat oven 180°C/350°F/Gas 4. Lightly butter and line with baking paper a 17cm round cake tin.
2. Measure oil in a large bowl, add sugar and vanilla.
3. Beat the egg and add to the bowl with oil, sugar and vanilla.
4. Peel and finely grate the carrots, add to the mixture.
5. Add sultanas, flour, baking powder, bicarbonate of soda, cinnamon and nutmeg to the mixture and mix well.
6. Add the coconut and chopped dates and ensure all the ingredients are mixed together.
7. Zest 1/2 an orange, add this to the mixture stirring in well.
8. Pour the finished mixture into the prepared tin.
9. Bake in a preheated oven for 20-30 minutes until the cake is firm to the touch and a skewer pushed gently into the cake comes out cleanly.
10. Leave to cool on a wire rack.

Frosting
11. Place cream cheese, softened butter, sieved icing sugar and 1/2 an orange zested in a bowl, beat until smooth.
12. Spread over the top of the cooled cake. Sprinkle a little extra orange zest or a pinch of cinnamon. Serve and enjoy!
